Orange Cashew Rice - cooking recipe

Ingredients
    3 Tbsp. butter or oil
    2/3 c. diced celery
    2 Tbsp. chopped onion
    1 1/2 c. water
    2 Tbsp. grated orange rind
    1/4 tsp. salt
    1 c. raw brown rice
    1 c. lightly toasted almonds or cashews
    1 small can mandarin oranges, drained
Preparation
    Saute celery and onion in butter.
    Add water, orange juice and rind and salt.
    Bring mixture to a boil and add rice.
    Cover and simmer for 45 minutes or until liquid is absorbed.
    Stir in cashews and orange segments.
    If fresh fruit is preferred, pineapple or nectarines are very good.
    Serves 6.
