Orange Baked Yams - cooking recipe
Ingredients

6 medium yams
1 c. orange juice
2 tsp. grated orange rind
1 Tbsp. cornstarch
3 Tbsp. melted butter
1/3 c. brown sugar
1/3 c. sugar
pinch of salt
Preparation

Boil yams until tender in skins about 30 minutes.
Peel; cut in thick slices.
Arrange in buttered casserole.
Combine remaining ingredients; cook until thickened.
Pour over potatoes. Cover.
Bake in moderate oven at 350\u00b0 for 20 minutes.
Uncover; bake 15 minutes more.
Makes 6 servings.
