Chicken And Sausage Jambalaya - cooking recipe
Ingredients

1 small chicken, cut in 2-inch pieces
1/2 c. oil
2 c. finely chopped onions
1/2 c. chopped bell pepper
1 c. each: fresh parsley and green onions
2 lb. smoked sausage, sliced 1/4-inch thick
3 c. long grain rice
1 Tbsp. chopped garlic
salt and pepper to taste
8 c. chicken stock
Preparation

In a heavy skillet, brown chicken in oil.
When brown, remove from pot.
Add onions, pepper, parsley and green onions; saute until onions are clear.
Add sausage, rice, stock, garlic, chicken, salt and pepper.
Cook until nearly all water has boiled out, then reduce heat to low.
Cover.
Let simmer until rice is done, about 1 hour.
Do not lift lid for 1 hour.
