Ingredients

1/2 c. yellow cornmeal
1/4 c. flour
1/2 tsp. salt
1 tsp. baking soda
1 tsp. sugar
2 c. buttermilk
2 1/2 tsp. vegetable oil
1 egg yolk, slightly beaten
1 egg white, stiffly beaten
Preparation

Mix cornmeal, flour, baking soda, salt and sugar in a bowl. Make a well and add buttermilk, 2 teaspoons of oil and egg yolk. Mix well; carefully fold in egg white.
Let stand for 10 minutes. Fry on hot griddle or pan using oil as needed.
