Roasted And Stuffed Peppers - cooking recipe

Ingredients
    8 bell peppers, roasted
    1/4 c. olive oil plus 1 Tbsp.
    1 medium onion, chopped
    2 tsp. fresh thyme
    1/2 c. black olives, chopped
    3/4 c. cooked rice
    1/4 lb. mushrooms, sliced
    1 lb. tomatoes, chopped
    1 Tbsp. fresh basil
Preparation
    Roasted peppers:
    Broil 2 inches from heat.
    Turn as skin blisters and blackens, 15 to 20 minutes.
    Put in plastic bag. When cool, cut out cores and remove seeds.
