Roasted Garlic And Brie Soup - cooking recipe

Ingredients
    2 heads garlic, broken into cloves (not peeled)
    6 Tbsp. olive oil
    1 medium onion, chopped fine
    2 stalks celery, chopped fine
    1 carrot, chopped fine
    1/4 c. flour
    6 c. chicken stock or broth
    1/4 tsp. thyme
    1/2 tsp. oregano
    7 to 8 oz. Brie cheese, rind peeled off
Preparation
    Preheat oven to 375\u00b0. In shallow baking dish, place the unpeeled garlic cloves and drizzle with 2 tablespoons of the olive oil. Cover dish with foil and bake until tender, approximately 30 minutes. When tender, remove dish to rack to cool.
