Swiss Steak - cooking recipe
Ingredients

1 3/4 lb. round steak, cut 3/4-inch thick
1 Tbsp. vegetable oil
1/4 tsp. pepper
1/4 c. water
4 medium tomatoes
1 or 2 medium jalapeno pepper or small bell pepper
3/4 tsp. salt
1/2 tsp. dried thyme
1 large onion
1 Tbsp. fresh parsley
Preparation

Chop onion and parsley.
Cut pepper into 1/8-inch slices.
In large skillet, heat oil over medium high heat until hot.
Place beef steaks in skillet and brown on both sides.
Pour off drippings, if needed.
Season steak with salt, thyme leaves and pepper.
Top with onion and jalapeno pepper.
Cover and continue cooking 30 minutes or until tender.
Remove steak, cut into serving pieces and return to sauce.
Serve over prepared rice, pasta or mashed potatoes.
Garnish with parsley.
