Rice And Black Bean Salad - cooking recipe
Ingredients

3 c. (about 1 c. raw) cooked rice (room temperature)
1 (16 oz.) can black beans, drained and rinsed
1 medium red bell pepper, minced
1 medium green bell pepper, minced
4 green onions, minced
1/4 c. minced fresh cilantro
1/3 c. peanut oil
1/4 c. fresh lime juice
salt and freshly ground pepper
Preparation

Combine first 6 ingredients in a large bowl.
Whisk together the oil and lime juice in a small bowl.
Pour over rice mixture and toss to coat. Season with salt and pepper.
Yields 6 servings.
(Can be prepared 1 day ahead, cover and refrigerate.)
