Creole Black-Eyed Peas - cooking recipe
Ingredients

4 slices bacon
1 c. onion, chopped
1 c. bell pepper, chopped
1 c. celery, chopped
1 (14 1/2 oz.) can tomatoes, chopped
1 (16 oz.) can black-eyed peas
2 to 3 tsp. sugar
1 bay leaf
Preparation

Cook bacon in
a large skillet until crisp; remove bacon, reserving drippings in skillet.
Crumble bacon and set aside. Saute onion, bell pepper and celery in drippings until tender. Stir in remaining ingredients and cook over low heat 10 to 15 minutes, stirring occasionally. Remove bay leaf and sprinkle with crumbled bacon.
Serves 6.
