Ham And Red Eye Gravy - cooking recipe

Ingredients
    6 slices country cured ham, sliced thin
    1 Tbsp. lard (Crisco)
    1/8 c. or less water
    1 Tbsp. strong coffee
Preparation
    In frying pan, put the ham.
    Cover with water and bring to a boil to remove excess salt.
    Drain off water and add the lard. Fry gently until done, not hard.
    Remove ham to a shallow bowl. Add a little water to pan, stirring any brown that stuck to pan. Add coffee.
    Pour over ham in dish and pass around table to be spooned over rice, grits or a split biscuit.
