Shrimp Ole - cooking recipe

Ingredients
    1/4 c. salad oil
    2 medium size onions, sliced
    1 c. celery, sliced
    1 medium green pepper, sliced
    2 cloves garlic, crushed
    2 Tbsp. all-purpose flour
    2 (1 lb.) cans tomatoes
    2 (4 oz.) cans chopped mushrooms
    4 canned pimientos, sliced
    2 bay leaves
    1 tsp. oregano
    1 Tbsp. chili powder
    2 tsp. salt
    1/4 tsp. pepper
    2 lb. fresh or frozen shrimp, shelled and deveined or 2 (8 to 10 oz.) pkg. frozen, peeled and deveined shrimp
Preparation
    Heat oil.
    Add onions, celery and green pepper and cook until tender.
    Add flour; cook, stirring constantly, until lightly browned.
    Add tomatoes, undrained mushrooms, pimientos and seasonings; mix well.
    Cover and cook 10 minutes.
    Add shrimp; cook 3 to 5 minutes, stirring occasionally.
    Serve over cooked rice or corn chips, as desired.
    Makes 8 servings.
