Ingredients

4 qt. beets
3 c. vinegar
2 c. water
2 1/2 c. sugar
2 tsp. allspice
1 (3-inch) stick cinnamon or 1/4 tsp. ground cinnamon
1/2 tsp. whole cloves
1 tsp. salt
Preparation

Cook beets until tender.
Slip off skins.
Combine rest of ingredients and bring to boil.
Simmer 5 minutes.
Add beets and simmer 5 more minutes.
Pack beets into hot jars, fill with syrup and seal.
