Ingredients

1 1/2 c. flour
3/4 c. sugar
1/4 tsp. soda
1 c. coconut
1 1/2 Tbsp. buttermilk
1/2 c. butter
1 tsp. vanilla
1/2 tsp. baking powder
1 egg
Preparation

Cream butter and sugar; add egg.
Beat until fluffy.
Blend in buttermilk and vanilla.
Add flour, soda and baking powder.
Toast coconut in a 200\u00b0 oven; cool.
Add to mixture.
Chill for about 10 minutes.
Drop by rounded teaspoonfuls on greased cookie sheet and bake at 375\u00b0 for 10 minutes.
