Spiced Pear Butter - cooking recipe

Ingredients
    12 fresh pears (about 6 lb.)
    1/4 c. cider vinegar
    4 c. sugar
    1/2 c. orange juice
    1/4 c. lemon juice
    1 1/2 tsp. whole allspice, tied in a cheesecloth bag
    paraffin
Preparation
    Pare and core pears; cut into 1-inch cubes.
    To make 3 quarts, place in 5-quart kettle with vinegar and 1/4 cup water.
    Cook, covered, until soft, about 30 minutes.
    Mash with potato masher or put through food mill.
    Measure pulp.
    There should be about 7 cups.
    Return to kettle.
