Roasted Red Pepper Salad - cooking recipe

Ingredients
    4 red bell peppers
    1/3 c. virgin olive oil
    freshly ground black pepper
Preparation
    Place whole peppers on an open grill over a red-hot fire.
    Char all sides evenly.
    Place in a closed paper bag for 15 minutes. Peel away the charred skin.
    Remove the tops and seeds.
    Slice into narrow strips and marinate in the olive oil and pepper for at least 30 minutes.
    Serve at room temperature on a bed of Italian parsley or a leaf of red lettuce.
