English Rice Pudding - cooking recipe

Ingredients
    4 Tbsp. polished or short grain rice (not instant)
    1 1/4 c. (20 fluid oz.) milk 1%, 2% or whole
    4 Tbsp. sugar or to taste
    nutmeg to taste
    1/4 to 1/2 c. raisins (optional)
Preparation
    Cover rice with boiling water and let stand overnight.
    Step 1: Heat oven to 325\u00b0.
    Drain rice, cover with fresh boiling water. Bake until water is almost absorbed, 10 to 15 minutes.* Step 2: Turn oven down to 300\u00b0; add sugar, nutmeg and some of the milk. Stir until the sugar is dissolved.
    Step 3:
    Add remaining milk and raisins (if used); return to oven for approximately 2 hours.
