Carrot Pie - cooking recipe
Ingredients

2 eggs
1/2 c. sugar
1 Tbsp. cornstarch
1 1/2 c. cooked, mashed carrots (about 1 1/2 lb.)
1 tsp. pumpkin pie spice
2/3 c. evaporated milk
1 unbaked 9-inch pastry shell
Preparation

Combine first 6 ingredients in container of electric blender. Process on high speed until smooth.
Pour into pastry shell.
Bake at 375\u00b0 for 35 to 40 minutes or until set.
Cool.
Yield:
1 pie.
