Cinnamon Spiced Cucumber Rings - cooking recipe

Ingredients
    yellow cucumbers
    1 c. lime
    4 1/2 c. water
    1/2 c. cider vinegar
    2 tsp. red food coloring
    1 1/2 tsp. alum
    2 c. cider vinegar
    2 c. water
    2 c. sugar
    2 c. red hots
    4 cinnamon sticks
Preparation
    Wash, peel and remove seeds from enough yellow cucumbers for 1 gallon, sliced 1/4-inch thick.
    Cover with lime mixed with 4 1/2 cups water in a pan and let set 24 hours.
    Drain and rinse well. Soak rings in clear water for 3 hours.
    Mix together 1/2 cup cider vinegar, red food coloring, alum and enough water to cover rings and simmer 2 hours.
    Drain well.
