Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    1 onion, chopped
    1 c. milk
    2 eggs
    1/2 c. grated Cheddar cheese
    8 oz. seasoned dressing mix (for cracker crumbs)
    1 c. grated cheese (your favorite)
Preparation
    Cook cubed, peeled eggplant and onions in a small amount of water until tender.
    Drain.
    Mix with milk, eggs, 1/2 cup cheese and dressing in a greased 2-quart casserole.
    Bake for 35 minutes at 350\u00b0.
    Add remaining cheese to top and cook 10 minutes longer.
