Green Bean And Mushroom Fricassee(Yield: 8 Servings) - cooking recipe

Ingredients
    1 pound green beans
    24 baby carrots, halved lengthwise
    2 oz. pine nuts
    2 Tbsp. olive oil
    6 oz. Shiitake Mushrooms, sliced
    3 plum tomatoes, peeled, seeded, sliced thin
    1-1/2 Tbsp. lemon juice - fresh
    salt and pepper, to taste
Preparation
    Bring large pot of salted water to a boil. Add the green beans and carrots and cook until crisp-tender, about 5 minutes. Drain and pat dry with paper towels.
