Mexican Bakers - cooking recipe

Ingredients
    1 tsp. oil
    1/2 c. diced bell pepper
    1/2 tsp. chili powder
    1/4 tsp. ground cumin
    4 oz. drained cooked beans
    1/2 c. salsa
    4 (4 oz.) baked potatoes
    3 oz. grated Cheddar cheese
    2 Tbsp. minced onions
Preparation
    In a small skillet, heat oil; add pepper and cook, stirring often for 5 minutes.
    Reduce heat to low, add cumin and chili powder and cook 2 minutes, stirring constantly.
    Add beans and salsa, cover and simmer 5 minutes.
    Serve over hot, baked potatoes.
    Top with cheese and onion.
