Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    2 medium onions
    2 medium tomatoes, sliced
    olive oil
    3/4 c. sharp cheese, shredded
    salt, pepper and paprika
Preparation
    Slice eggplant into 1/2-inch pieces.
    Place by layers in a casserole.
    Season and add a little of the cheese.
    Continue layering.
    Sprinkle with oil and paprika.
    Cover and bake 45 minutes in moderate oven.
    Uncover and bake until cheese starts to brown.
    Serves 4.
