Captivating Hawaiian Pineapple - cooking recipe
Ingredients

2 medium pineapple
1 (8 oz.) pkg. cream cheese, softened
1 (1 lb. 10 oz.) can pitted dark cherries or strawberries, drained (save syrup)
1 tsp. grated lemon peel
1/4 c. toasted slivered blanched almonds
Preparation

Cut top off each pineapple.
Scoop out the center.
Place each pineapple in an open container.
Freeze 3 hours or until cavity is slightly icy.
In a small mixer bowl, beat cream cheese until smooth.
Add 2 tablespoons of reserved syrup and the lemon peel and beat until fluffy.
Stir in fruit (cherries or strawberries) and almonds.
Fill each pineapple.
Return to freezer until filling is hardened (about 3 hours).
Just before serving, cut each pineapple into 8 slices.
Makes 16 servings.
