Sweet Potato Hash - cooking recipe

Ingredients
    3 1/2 lb. sweet potatoes, cut into 1 inch cubes
    3 quarts water
    1 tsp. salt
    2 Tbsp. butter or margarine
    2 Tbsp. vegetable oil
    3 c. chopped onion
    1/2 tsp. ground white pepper
Preparation
    Combine first three ingredients in a Dutch oven; bring to a boil.
    Cover and cook 3 minutes.
    Drain immediately and cover with cold water.
    Drain.
    Pat dry or let stand 15 minutes.
