Pineapple And Sweet Potato - cooking recipe
Ingredients

1 (8 oz.) can pineapple, crushed
2 to 3 medium size sweet potatoes
4 c. water
4 Tbsp. butter or margarine
2 to 3 Tbsp. brown sugar
1 bag large marshmallows
Preparation

Heat oven to 375\u00b0.
Drain pineapple and set aside.
Place sweet potatoes in 3-quart saucepan; add water.
Cook over medium heat 45 minutes.
Remove from heat and peel potatoes under cold running water.
Place in a large bowl.
Mash potatoes.
Add butter, brown sugar and pineapple.
Stir well.
Grease 1-quart casserole dish well with butter.
Spoon mixture into prepared dish.
Place marshmallows on top of mixture and bake, uncovered, for about 30 minutes.
