Lemon-Blueberry Muffins - cooking recipe

Ingredients
    1 egg
    2 c. variety baking mix
    1/4 c. sugar
    2 Tbsp. vegetable oil
    1 (6 oz.) container lemon-flavored yogurt
    3/4 c. fresh or frozen blueberries
Preparation
    Heat oven to 400\u00b0.
    Grease bottom of 12 muffin cups or line with paper baking cups.
    Beat eggs slightly in a medium bowl with a fork.
    Mix in baking mix, sugar, vegetable oil and yogurt just until moistened (batter should be lumpy).
    Gently fold blueberries into batter and fill muffin cups 2/3 full.
    Bake 15 to 18 minutes, or until golden brown.
    Carefully remove muffins from pan right away.
    Cool on wire rack.
