Greek-Style Potato Salad - cooking recipe

Ingredients
    3 lb. small red potatoes, halved and sliced
    2 unpeeled garlic cloves
    1 c. crumbled Feta cheese
    1/2 c. chopped parsley
    2 Tbsp. red wine vinegar
    1/2 c. olive oil
    1 1/2 c. calamato or black olives, pitted and slivered
    1 Tbsp. fresh oregano or 1 tsp. dried
    pepper to taste
Preparation
    Cook potatoes; cool slightly and combine with the slivered olives.
    In a small pan of boiling water, boil garlic for 5 minutes, then peel garlic cloves.
    In a blender, puree red wine vinegar, garlic cloves, olive oil, oregano, parsley and pepper. Pour dressing over warm potatoes.
    Add Feta cheese, toss and serve.
    Serves 6 to 8.
