Boiled Country Ham - cooking recipe

Ingredients
    ham
    water
Preparation
    Cut off hock, soak ham overnight.
    Wash ham and trim off hard surface of cut side of ham.
    Fill a large roaster 1/2 full of water.
    Put ham in, skin side up.
    Start ham at 450\u00b0 and reduce heat to 300\u00b0 when water boils.
    Cook 20 minutes to the pound or until internal temperature of ham reaches 170\u00b0.
    When done, allow to cool in liquid for 4 to 5 hours.
    Trim the ham of excess fat, leaving 1/4 to 1/2-inches of fat.
