Oat Bran Muffins - cooking recipe
Ingredients

1 3/4 c. oat bran
1/2 c. flour
1/4 c. brown sugar
1 Tbsp. baking powder
1 tsp. cinnamon
1 c. milk (whole or skim)
1/2 c. (4 oz.) egg substitute (equivalent to 2 eggs)
1/4 c. honey
3 Tbsp. corn oil
1/4 c. chopped nuts
1/2 c. raisins
3/4 c. chopped apple or 2 bananas, or 1/2 c. pumpkin, pureed
Preparation

Preheat oven to 425\u00b0.
Combine dry ingredients and add milk, egg substitute, honey and oil.
Mix until just moistened.
Add nuts, raisins and apples.
Fill greased muffin tins (or use muffin papers).
Sprinkle with cinnamon sugar if desired.
Bake for 15 to 17 minutes.
Yields one dozen muffins.
