Garden Rice - cooking recipe

Ingredients
    1 1/2 lb. zucchini
    16 oz. can whole kernel corn
    3/4 c. onion, chopped
    3 Tbsp. bacon fat
    16 oz. can tomatoes
    3 c. cooked rice
    1 1/2 tsp. salt
    1/4 tsp. pepper
    1/4 tsp. oregano
    1/4 tsp. coriander
Preparation
    Thinly slice zucchini.\tDrain corn.
    In a 12-inch Dutch oven, saute
    onions
    and\tzucchini in bacon fat until tender. Add corn and the remaining
    ingredients.
    Cover and simmer for 15 minutes.
