Manicotti Marinara With Peppers - cooking recipe

Ingredients
    14 pieces manicotti, cooked and cooled
    2 Tbsp. oil
    2 c. yellow and green pepper strips
    1 c. onion slices
    2 cloves garlic, minced
    1 c. sliced zucchini (optional)
    32 oz. jar marinara sauce
    1 tsp. dried basil
    1 tsp. oregano
    2 c. (8 oz.) Mozzarella cheese, shredded and divided
    1 3/4 c. (15 oz.) Ricotta cheese
    1 egg, slightly beaten
    1/4 c. grated Parmesan cheese
Preparation
    Cook vegetables in skillet with oil until soft.
    Add sauce and spices.
    Cook 3 minutes.
    Spread half of sauce in 13 x 9 x 2-inch baking pan.
    In bowl, stir together 1 cup Mozzarella, Ricotta, egg and Parmesan cheese.
    Fill tubes with Ricotta mixture; place in dish.
    Pour remaining sauce over pasta; sprinkle with 1 cup Mozzarella cheese.
    Bake at 350\u00b0 for 25 to 30 minutes.
    Let stand 10 minutes.
    Serves 7.
