Creamy Pineapple Salad - cooking recipe
Ingredients

3/4 c. crushed pineapple
1 envelope Knox gelatine
1/2 c. diet lemon-lime soda
1/2 c. diet orange soda
2 oz. cream cheese, cubed
dash of salt
sweetener to taste
pinch of lemon rind
1 tsp. lemon juice
Preparation

Pour lemon-lime soda in blender and sprinkle with gelatine. Soften for 1 minute.
Heat orange soda to boiling, add to blender and run until gelatine is dissolved.
Add remaining ingredients except pineapple.
Run until smooth.
Pour into bowl and chill until consistency of unbeaten egg whites; stir in pineapple.
Pour into mold and chill until set.
Whole recipe equals lunch portion of cheese and one fruit.
(Could also count towards dinner protein.)
Could use diet ginger ale in place of lemon-lime soda.
