Crab Cakes - cooking recipe

Ingredients
    2 eggs
    1/2 c. mayonnaise
    1 to 2 Tbsp. Dijon mustard
    1 lb. lump crab meat
    2 Tbsp. chopped Italian parsley
    1/2 c. green onions
    3 c. bread crumbs (reserve 1 c. for rolling cakes)
    1/8 tsp. cayenne pepper
Preparation
    Mix all ingredients together with 2 cups bread crumbs. Form patties, gently rolling a small ball of mixture in the reserved bread crumbs. Place in freezer for 30 minutes to firm. Cook in vegetable oil just enough to coat bottom of pan for 2 to 3 minutes on each side at medium temperature. Patties will be slightly brown on the outside.
