Banana Muffins - cooking recipe
Ingredients

1 1/2 c. all-purpose flour
1 1/2 c. low-fat Quaker 100% natural cereal
1/2 c. sugar
1 Tbsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 c. mashed, ripe banana
2/3 c. skim milk
2 Tbsp. vegetable oil
1 egg, slightly beaten
Preparation

Heat oven to 400\u00b0.
Line 12 medium muffin cups with paper baking cups or lightly spray bottoms only with nonstick cooking spray.
Combine dry ingredients. Add combined banana, milk, oil and egg.
Mix just until moistened.
Fill muffin cups 3/4 full. Bake 15 to 20 minutes or until golden brown.
Yields 1 dozen.
