Szechuan Chicken With Peanuts - cooking recipe

Ingredients
    2 whole chicken breasts, skinned, boned and sliced thin
    2 Tbsp. peanut oil
    2 Tbsp. dry sherry
    1/2 inch slice fresh grated ginger or 1/4 to 1/2 tsp. dried ginger
    2 to 3 cloves crushed garlic
    1 Tbsp. soy sauce
    2 to 3 dried red Szechuan peppers or other peppers to taste
    1 c. raw peanuts or 1 c. dry roasted peanuts*
    1 tsp. cornstarch
    3 green onions, cut in 1/2 inch lengths
    1/2 lb. snow peas or 1 box frozen snow peas
Preparation

    peanuts in peanut oil in microwave oven on High for

    minutes,
    every
    3\tminutes stir and check until toasted to taste.
