Baked Acorn Squash - cooking recipe

Ingredients
    3 acorn squash, halved and seeded
    2/3 c. diced celery
    1 1/2 c. apple, diced with peel
    1/4 c. low-fat butter
    1 1/2 c. soft bread crumbs
    1 c. grated cheese
    1/2 tsp. salt
    1/8 tsp. pepper
Preparation
    Place squash, cut side down, in a baking pan with a small amount of water and bake in a 400\u00b0 oven for 20 to 30 minutes or almost tender.
    Saute apples and celery in butter for 5 minutes. Stir in crumbs, cheese, salt and pepper.
    Fill squash hollows with the apple mixture and bake 10 to 15 minutes longer, or until squash is tender.
