Chili (Texas) - cooking recipe
Ingredients

2 to 3 lb. ground chuck
1 large onion
1 to 2 cloves garlic
1 tsp. chili powder
red pepper to taste
1 can peeled tomatoes
1 can large tomato sauce
1 can kidney beans (16 oz.)
1 can pinto beans (16 oz.)
1 can Old El Paso (mild) enchilada sauce
salt and pepper to taste
beer (optional)
Preparation

Chop onion.
In large 8-quart pan, cook chuck; remove all grease.
Add all ingredients and simmer until well blended, 4 hours or until tomatoes are cooked down.
It's overcooked if chuck loses its coarse texture.
Serves 8 to 10.
