Ingredients

2 c. cooked brown rice
3 c. skimmed milk
1/2 c. raisins
3 Tbsp. honey
1 tsp. vanilla
1/4 tsp. cardamom
Preparation

Mix all ingredients except vanilla in a saucepan.
Bring to a boil then simmer for 30 minutes, stirring frequently until pudding thickens.
Add vanilla and remove from heat.
Stir and cool. Chill before serving.
