Green Mountain Rice(From Marcliff Poultry Farm, Monroe, North Carolina) - cooking recipe

Ingredients
    1/2 c. chopped onion
    1 Tbsp. butter or margarine
    1 (3 oz.) pkg. cream cheese
    1/2 tsp. salt
    dash of pepper
    2 eggs
    1 1/2 c. milk
    2/3 c. rice (2 c. cooked)
    2 Tbsp. parsley
Preparation
    Cook onion in butter or margarine until tender, but not brown. In bowl, blend together cheese, salt and pepper.
    Beat in eggs, one at a time.
    Add milk and mix well.
    Stir in cooked rice, onion and parsley.
    Place in 10 x 6 x 1 3/4-inch baking dish.
    Bake at 350\u00b0 for 35 to 40 minutes.
    Remove and let stand 5 minutes.
    Makes 8 servings.
