Coconut Tea Cookies - cooking recipe
Ingredients

1/4 c. sugar
1/2 c. soft margarine
1 1/4 c. sifted flour
dash of salt
Preparation

Cut margarine into sugar and add sifted flour.
Mix with hands to a soft dough and press evenly into bottom of 9 x 9-inch pan, pressing a little up side about 1/2-inch.
Prick with fork and bake at 350\u00b0 until it begins to turn golden (15 minutes).
Drain 1 can pineapple well.
Spread this over crust.
Beat 1 egg well and gradually add 1/2 cup sugar, beating until thick and light colored and fold in 1 1/2 cup coconut.
Spread on top of pineapple.
Return to oven and bake until topping browns slightly, about 20 minutes at 325\u00b0.
