Ingredients

1 1/2 c. finely diced baked ham
1/2 c. finely diced celery
1/4 c. chopped pecans
2 Tbsp. chopped pimento stuffed olives
1/4 c. mayonnaise
1 Tbsp. finely chopped onion
4 medium sized tomatoes
1 Tbsp. chili sauce
crisp lettuce leaves
fresh parsley sprigs
Preparation

Mix
together the ham, celery, pecans, olives and onion in a large
bowl.
Stir
in
the
mayonnaise and chili sauce. Placing the stem down on a board, cut each tomato about 2/3 of the way down into 8 wedges.
Gently push wedges open to allow space
for stuffing.
Place
each
tomato
on a lettuce lined plate
and stuff with ham salad.
Garnish plates with parsley. Makes 4 servings.
