Tex-Mex Tofu Scramble - cooking recipe

Ingredients
    1 pkg. firm tofu
    1 medium tomato
    1/4 c. green onions, chopped
    1 c. sliced mushrooms
    4 oz. diced Ortega chiles
    1/2 c. grated Cheddar cheese
    1/2 c. salsa of your choice
    1 tsp. dill
    1/2 tsp. garlic salt
    pepper (optional)
    1 Tbsp. minced onion
    3 Tbsp. butter or margarine
    tortillas (optional)
Preparation
    Saute mushrooms, green onions, minced onions, dill and pepper. Rinse tofu, cut into small cube and place on paper towels to absorb water.
    When tofu is drained, add to onions and mushrooms. Stir.
    Add remaining ingredients except cheese.
    Serve on a tortilla.
    Grate cheese over it; add salsa.
    Yum!
