Ingredients

2 eggs
1/2 c. sugar
1/2 tsp. salt
2 1/4 c. milk
1 tsp. vanilla
2 c. cooked rice
dash of nutmeg
1/2 c. raisins (optional)
Preparation

Separate eggs.
Beat yolks.
Add sugar, salt, milk, vanilla and rice.
(Add raisins, if desired.)
Stiffly beat egg whites and fold into mixture.
Turn into baking dish.
Sprinkle with nutmeg. Bake in moderate oven at 350\u00b0 for 45 minutes.
Serves 6.
