Puget Sound Crab Cakes - cooking recipe

Ingredients
    1 lb. crabmeat
    1 Tbsp. lemon juice
    1 Tbsp. butter
    1 Tbsp. flour
    1/2 c. milk
    2 eggs, beaten
    1/4 c. bread crumbs
    1 tsp. salt
    pinch of pepper
    1 tsp. dry mustard
    2 tsp. Worcestershire sauce
    2 Tbsp. mayonnaise
Preparation
    Clean crabmeat of shells or cartilage, sprinkle with lemon juice and set aside.
    Melt butter in heavy skillet over medium heat, adding flour, then milk, stirring until thickens.
    Slowly stir hot sauce into beaten eggs.
    Add remaining ingredients, mixing well.
    Stir in crabmeat; chill until firm.
    Shape into 3-inch patties.
