Maryland Fried Chicken - cooking recipe

Ingredients
    1 slightly beaten egg
    1 1/4 c. milk
    2/3 c. fine cracker crumbs
    1/2 tsp. salt
    4 chicken legs or 4 thighs
    3 to 4 Tbsp. shortening
Preparation
    Combine eggs and 1/4 cup of the milk.
    Mix cracker crumbs, salt and dash of pepper.
    Dip legs into egg mixture, then roll in crumbs.
    In heavy skillet, brown chicken in hot shortening.
    Turn with tongs.
    Add remaining 1 cup milk.
    Cover tightly and simmer 35 minutes.
    Uncover and cook about 10 minutes or until tender.
