Raisin Bran Muffins - cooking recipe
Ingredients

1 egg
1 1/4 c. flour
1 tsp. baking soda
1 c. Raisin Bran cereal
1/4 c. chopped nuts (optional)
1 c. buttermilk
3/4 c. brown sugar, packed
1/4 tsp. salt
1/4 c. vegetable oil
Preparation

In small mixing bowl, beat egg and buttermilk.
Mix in all other ingredients and stir well.
Spoon batter into 6 paper lined custard cups or microproof muffin pan.
Fill about half full.
Cook 6 muffins at a time on High (Maximum power), 2 to 3 minutes or until no longer doughy.
Repeat twice.
Makes 18 muffins.
