Chicken Parmesan - cooking recipe
Ingredients

4 half boneless chicken breasts, skinned
2 (14 1/2 oz. each) cans Del Monte Italian Style stewed tomatoes
2 Tbsp. cornstarch
1/2 tsp. oregano or basil, crushed
1/4 tsp. hot pepper sauce (optional)
1/4 c. grated Parmesan cheese
Preparation

Slightly flatten each chicken breast.
Place in baking dish. Cover with foil and bake in preheated 425\u00b0 oven for 20 minutes. Remove foil and drain.
Combine tomatoes, cornstarch, oregano and pepper sauce.
Stir to dissolve cornstarch.
Cook, stirring constantly, until thickened.
Pour sauce over chicken and top with cheese.
Return to oven and bake 5 minutes, uncovered, or until heated through.
Garnish with chopped parsley and serve with hot, cooked rice, if desired.
