Ingredients

1/3 c. butter or margarine, softened
1 c. sugar
1 egg
1 tsp. coconut extract
1 c. instant potatoes
5 1/2 oz. or 1 pkg. Bix-Mix
Preparation

Cream together butter, sugar and coconut extract.
Add egg and beat.
Stir in Bix-Mix and spud flakes.
Cover bowl and chill for about 1 hour.
