Ratatouille-Eggplant Country Style - cooking recipe

Ingredients
    2 Tbsp. oil
    1 c. sliced onions
    2 cloves garlic, minced
    4 green peppers, diced large
    3 c. eggplant, diced
    3 c. zucchini, diced
    2 c. peeled, seeded, chopped tomatoes
Preparation
    Saute garlic and onions in oil.
    In a casserole, combine all ingredients and simmer 35 to 45 minutes.
    Uncover and continue cooking until most of the liquid is absorbed.
    Serve warm or cold.
