Piccalilli - cooking recipe

Ingredients
    1 qt. chopped green tomatoes
    2 sweet green peppers, chopped
    2 sweet red peppers, chopped
    2 large mild onions, chopped
    2 Tbsp. mixed pickling spice
    1 small cabbage, chopped
    1/2 c. salt
    2 c. apple cider vinegar
    2 1/4 c. dark brown sugar, packed
Preparation
    Remove label from 1 (12 ounce) jar sweet mixed pickles.
    Drain juice and thoroughly fill jar with sugar (about 1 1/2 cups), being sure all space between pickles is filled.
    Insert table knife in jar to make room for sugar.
    Let stand for a few minutes and add more sugar, if possible.
    Put a lid securely on jar.
    Invert jar and place in refrigerator.
    Turn jar occasionally so the sugar dissolves and pickles crystallize.
    After a week, refrigeration is not necessary.
